What Ingredients Do We Cook With?


Here at Mountain Meals and More, we are deeply committed to the philosophy of cooking with ingredients that not only tantalize your taste buds but also nourish your body and spirit. Our approach to food is rooted in the belief that what we consume should contribute positively to our overall well-being. In this context, I would like to elaborate on several key ingredients that I feel particularly passionate about, as they play a crucial role in the quality and flavor of the meals we prepare.

Flour


While I do utilize processed all-purpose flour in my baking and cooking, I am particularly discerning about the type of flour I choose. I ensure that the flour is unbleached, as this choice helps to minimize unnecessary processing that often leads to a chemical flavor that can detract from the natural taste of baked goods. Unbleached flour not only retains more of the grain's natural nutrients but also offers a richer flavor profile, which is essential for creating delectable baked items. Additionally, I often explore alternative flours, such as whole wheat or almond flour, depending on the recipe and the desired nutritional benefits.


Fats and Oils


When it comes to fats, my absolute favorite is, without a doubt, butter! Many culinary enthusiasts agree that the secret to delicious food often lies in the quality of the butter used. I prefer high-quality salted butter as my go-to option, as its rich flavor enhances a wide array of dishes, from savory to sweet. For crafting flaky, buttery croissants, I opt for Irish or European-style butter. This type of butter contains fewer milk solids, which contributes to a creamier texture and greater flexibility, making it ideal for lamination in pastry-making.

As for oils, my first choice is always light-tasting olive oil. This versatile oil is the base for all of my homemade salad dressings, providing a subtle yet distinct flavor that elevates the freshness of the greens. Occasionally, I incorporate coconut oil when the dish calls for its unique flavor profile, particularly in tropical or Asian-inspired recipes. Furthermore, I sometimes utilize rendered fats such as lard or tallow, which are excellent for creating rich, flaky pie crusts and other baked goods that benefit from their unique properties. It is important to note that you will not find vegetable oil, canola oil, soy oil, or other seed oils in my kitchen. However, I do recognize that certain pre-made ingredients, like mayonnaise, may contain these oils, and I use them sparingly and thoughtfully.


Food Colors


I take a firm stance against the addition of artificial colors in any of my culinary creations. The colors that you will find in my kitchen are derived solely from natural sources. For instance, if a dish takes on a yellow hue, it is achieved through the use of egg yolks, turmeric, or the zest of fresh lemons. Even pink frosting is crafted using the natural vibrancy of fruit juices, ensuring that every color in my dishes is as wholesome as the ingredients themselves. Sprinkles or M&Ms may occasionally make an appearance, but only in small quantities and as delightful embellishments, rather than as a primary focus.



Sugar


While I do incorporate processed sugar into most of my desserts, I strive to use it judiciously and with intention. Whenever possible, I opt for 100% pure maple syrup or raw honey as natural sweeteners, both of which offer unique flavors and additional health benefits. All of my salad dressings that require sweetness are sweetened with maple syrup or honey, enhancing their taste while keeping them more natural. I also enjoy cooking with fruits like dates when appropriate, as they provide a rich sweetness along with fiber and nutrients. Currently, I have only two recipes that call for corn syrup, and even in those instances, it is used sparingly. I consciously avoid any other sweeteners or sugar substitutes, as I believe in the integrity of using whole, natural ingredients in my cooking.
